HTownPicks Experience | Brisket That Makes You Melt

Start with the brisket. Fatty or lean, it comes thick-cut with a bark so peppery and dark it could double as art. We tried a two-meat plate with the Brisket and Turkey. Let’s say we’re still thinking about them.
Each meat is sliced to order by staff who clearly take pride in their craft. The Brisket had a satisfying snap with rich smoky flavor, while the Turkey was tender with just the right balance of sweetness and spice. This is Texas barbecue that doesn’t just impress, it feels like a moment.
And we need to discuss the sides. The Mac & Cheese is a cheese and crunchy heaven. We also tried the Potato salad and pickled onions, which both tasted like they were made in someone’s Southern grandma’s kitchen. But nothing, and we mean nothing, could have prepared us for dessert.
Truth BBQ’s cake game is unmatched. We chose the banana caramel slice, which towered almost 7 inches tall. Moist, decadent, and topped with Heath toffee bits, it turned heads at nearby tables. And yes, we finished it all.
The Vibe & Environment
Truth BBQ is housed in a converted auto shop with an open-pit kitchen, long communal picnic tables, and a soundtrack that bounces between country hits and classic rock. It gets loud during peak hours, but in the best way, like a backyard party, you’re thrilled to be invited to. The atmosphere is lively, with the sounds of sizzling meat and chatter filling the air, creating a truly Texan dining experience.
Outside, there’s a string-lit patio perfect for catching up with friends over a tray of ribs and Shiner Bock. And the staff? Warm, welcoming, and efficient. Even when the line is out the door, they move it fast without making you feel rushed.
The History
The man behind it all, Leonard Botello IV, launched the original Truth BBQ in Brenham, TX, back in 2015. A self-taught pitmaster, Leonard gained a cult following by smoking meat the hard way. Low and slow, over real wood. His dedication to the craft and refusal to cut corners has earned Truth BBQ a reputation for serving some of the most authentic and flavorful barbecues in Texas. Houston’s location opened in 2019 and brought the same fire (literally) to the city.
In 2024, Truth BBQ earned a Bib Gourmand designation from the Michelin Guide, making it not just a neighborhood gem but a nationally recognized BBQ destination.
HTownPicks Tips For A Better Experience
Beat the Rush:
Truth BBQ opens at 11 AM, but the line often forms earlier, especially on weekends. Arrive by 10:30 AM to have the first pick of the meats before they sell out.
Parking Strategy:
The on-site lot is limited, so consider parking on adjacent side streets or planning to walk a block or two during peak hours.
Save Room for Dessert:
The cakes are massive and made fresh daily. Split one with your date, or ask for a to-go box. You won’t regret it.
Bring the Crew (or Not):
Communal tables are great for groups, but if you’re looking for a more intimate setting, snag a seat on the patio during off-peak times.
Know Before You Go:
If you’re on a tight schedule, plan for at least a 15 to 20-minute wait or order online for pickup. (We Got There At 4:30ish With No Wait)
